These taste very much like a brownie cookie and they are so simple to make!!!

Ingredients (all organic if you can!)

  • 1 1/2 cups almond flour
  • 2/3 cups unsweetened cocoa powder
  • 1/2 cup date sugar (SEE NOTES)
  • 1 1/2 teaspoon baking powder
  • 1/3 teaspoon salt
  • 1 1/2 teaspoon vanilla
  • 1/2 cup water
  • 1/2 Cup Chocolate Chips (SEE NOTES)
  • 1/2 Cup Chopped Walnuts

Directions

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper. Set aside.
  2. In a medium bowl, whisk together all the dry ingredients until well-mixed.
  3. Add the vanilla and the water and stir until combined.
  4. Fold in chocolate chips and walnuts and mix to combine.
  5. Measure leveled tablespoons of mixture and put on cookie sheet. Keep them in ball shape!
  6. Bake for 12-16 minutes. Mine took 14 minutes. Allow cookies to cool on the cookie sheet for about 10 minutes and then move them to a cooling rack. Let cool completely before storing.

*Notes

DATE SUGAR- is NOT considered an added sugar. You can use coconut sugar if you don’t have date sugar. Coconut sugar IS considered an added sugar, but it doesn’t spike your blood sugar.

CHOCOLATE CHIPS – Just Dates Chocolate Chips – sweetened with just dates! Or Hue Chocolate Chips – sweetened with coconut sugar, but watch this because Coconut sugar is still considered an added sugar.

These cookies can be stored in the freezer for up to 3 months (HA! Not in my house they can’t!!)
