Ingredients

  • 1 Cup good quality Olive oil
  • 1 bunch Fresh Chives (about .75 oz)

Directions

  1. Wash the chives and pat them dry to remove excess moisture.
  2. Put the chives and the oil into the blender and puree it all together.
  3. Let the pureed chive oil sit in a glass container or other nonreactive jar for 2 to 3 days in the fridge.
  4. Strain the green chive oil through a fine mesh strainer to extract only the colored oil.
  5. Store the oil in an airtight container in the fridge, for a couple of weeks.

This is fabulous drizzled on soup, think Vegan Leek and Potato Soup!
