Ingredients
- 1/2 cup raw cashews, soaked overnight or boiled 15 minutes, DRAINED (measure before soaking)
- 1/2 cup water
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar (or apple cider vinegar)
- 2 tablespoons Dijon mustard
- 1 clove garlic
- 1/2 teaspoon salt or to taste
- 1/4 teaspoon pepper
- 1 1/2 teaspoon herbes de Provence (or other herbs, to your liking)
Directions
- Blend all ingredients (except herbes de Provence) in a high-speed blender.
- Add Herbes de Provence and just barely pulse your blender to mix in the herbs, without blending them up.
Notes
Use immediately or refrigerate.
If not using right away, let come to room temperature before serving. If it gets too thick you can thin it with a touch of water.
