Baked White Fish with Almond Meal Topping

Ingredients

  • 2 tbsp almond meal or almond flour
  • 1 tbsp hemp seeds
  • 2 tbsp Parmesan cheese
  • 1 clove minced garlic
  • 1 tablespoon chopped fresh herbs of your choice (or 1 teaspoon if dried)
  • 1 tbsp avocado oil
  • 1 pound fish filet of your choice (Cod, Halibut, Rockfish…)

Directions

  1. Mix all of the ingredients together, except for the fish.
  2. Place fish in baking dish (ceramic works great or a baking sheet with parchment paper.)
  3. Spoon the mixture on top of the fish, dividing evenly between however many pieces you have in your pound of fish
  4. Pat the topping down so it covers the whole piece of fish
  5. Bake fish, at 450 degrees for about 7-8 minutes (set timer for 5 minutes and start checking)
  6. Optional, drizzle with lemon juice
  7. EAT
