Oatmeal Cookies with Cacao Chips and Raisins – Gluten Free, Vegan and No Added Sugar

Ingredients (all organic if you can!)

WET

  • ½ cup melted coconut oil
  • ½ cup date syrup*
  • 1 flax egg (1 tablespoon ground flaxseed + 3 tablespoons warm water) or regular egg if not vegan
  • 2 teaspoons pure vanilla extract

DRY

  • 1 cup gluten free oat flour – if using homemade oat flour, make sure it’s very finely ground (not coarse)*
  • 1 ½ cups gluten free rolled oats*
  • 3 tablespoons peanut powder
  • 1 teaspoon baking powder
  • 1 tablespoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1/3 teaspoon salt

ADD-INS

  • 1/2 Cup Unsweetened Cacao Chips*
  • 1/2 Cup Raisins
  • 1/4 Cup Shredded, Unsweetened, Coconut (optional)

Directions

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper or greased foil. Set aside.
  2. In a large bowl, whisk together all the wet ingredients. Whisk until well-mixed. Set aside.
  3. In a medium bowl, whisk together all the dry ingredients.
  4. Add the dry mixture to the wet mixture. Stir to combine.
  5. Fold in Add-Ins (Cacao chips, raisins and coconut, if using.)
  6. Cover bowl and chill in the freezer for about 20 minutes, until firm throughout. If necessary, allow to thaw at room temperature just until it’s soft enough to scoop, but still very firm and chilled.
  7. Measure rounded tablespoons of mixture and put on cookie sheet, about 1” apart. (These will not spread but you want to have enough room to flatten them out.)
  8. Flatten out cookies to about 1/4 inch with your spatula.
  9. Bake for 12-16 minutes. Mine took 12 minutes. Allow cookies to cool on the cookie sheet for about 10 minutes (on a cooling rack). Let cool completely before storing.

*Notes

DATE SYRUP – is NOT considered an added sugar.

OAT FLOUR AND OATS – Oats are gluten free naturally, but may come into contact with gluten during processing. To ensure your cookies are truly gluten-free, make sure you buy oats that state “gluten free” on the label.

CACAO CHIPS – These are somewhat bitter, but when they’re in the cookie, they blend in with the raisins and become more like a chocolate chip. It won’t be EXACTLY like a chocolate chip, but very good and NO ADDED SUGAR!

These cookies can be stored in the freezer for up to 3 months.
