Ingredients

Salad

  • 1 small (or ½ large) red onion, chopped or sweet white onion
  • 2 cups frozen sweet corn* or omit
  • 1 red pepper*, chopped
  • 1 orange pepper*, chopped
  • 16 oz Sugar Plum* (or other sweet cherry tomato,) halved
  • 4 Persian cucumbers*, diced (you can leave the skin on)
  • 2 cups cooked black beans*, or 1 can, rinsed and drained garbanzo beans*
  • 4 ounces Cotija cheese, crumbled or Feta
  • ¼ – ½ cup chopped cilantro*, depending on preference or chopped basil*
  • 1 Tablespoon oregano
  • 5 oz Baby Power Greens (organic)

Dressing

Directions

  1. Mix all salad ingredients together.
  2. Mix all dressing ingredients together
  3. Toss with dressing right before serving
