Ingredients
Salad
- 1 small (or ½ large) red onion, chopped or sweet white onion
- 2 cups frozen sweet corn* or omit
- 1 red pepper*, chopped
- 1 orange pepper*, chopped
- 16 oz Sugar Plum* (or other sweet cherry tomato,) halved
- 4 Persian cucumbers*, diced (you can leave the skin on)
- 2 cups cooked black beans*, or 1 can, rinsed and drained garbanzo beans*
- 4 ounces Cotija cheese, crumbled or Feta
- ¼ – ½ cup chopped cilantro*, depending on preference or chopped basil*
- 1 Tablespoon oregano
- 5 oz Baby Power Greens (organic)
Dressing
- 1 Tablespoon “Zhoug” sauce or spicy basil sauce
- Juice of 1 lime or lemon
- 2 Tablespoons olive oil
- 2 teaspoons coconut sugar
- Salt and pepper to taste You may need less salt if using feta
Directions
- Mix all salad ingredients together.
- Mix all dressing ingredients together
- Toss with dressing right before serving
