Ingredients
- 3 frozen bananas, peeled and sliced before freezing
- 1 cup frozen strawberries*
- ½ cup full-fat, unsweetened coconut milk or coconut cream
- 1 teaspoon vanilla extract
Directions
- Put all of the ingredients into your food processor.
- Pulse the mixture a few times until the fruit is uniformly chopped.
- Then, blend it on high for one to two minutes or until the mixture is smooth and creamy.

Right out of the bowl = Soft Serve
Eat it later – Put into covered container and freeze. Before eating, make sure you defrost it enough that you can scoop it out because it will be very solid.
Notes
- Don’t like the coconut milk or cream? Use soaked and blended cashews and throw in a date or two for added sweetness.
- Sub frozen cherries for the strawberries and throw in ½ cup of cacao nibs to the blender.
- You don’t have to slice the bananas before freezing, they aren’t really hard to cut when they’re frozen BUT you do want to make sure you peel them before you freeze them. You want everything really frozen when you put it in the food processor and bananas are super hard to peel when they’re frozen.
