VEGAN MAYONNAISE – NO OIL*

Ingredients

  • 1 cup raw (organic) Cashews, soaked overnight*
  • 1 tsp Fresh Lemon Juice
  • 1 tsp Apple Cider Vinegar or Coconut Vinegar
  • 1/2 tsp Nutritional Yeast
  • 1/4 tsp Dijon Mustard
  • 3/4 tsp Salt*
  • 1/4 – 1/3 cup water

Directions

  1. Add the soaked Cashews, Lemon Juice, Vinegar, Nutritional Yeast, Dijon Mustard, and Salt to a high-speed blender.*
  2. Add 1/4 cup of Filtered Water if you are using it immediately in a recipe*  OR                                   Add 1/3 cup of Filtered Water if you are planning on using the Mayo during the next 10 days.
  3. Blend all ingredients together for 60 seconds, then transfer to a glass jar or sealable container.
  4. Store in the fridge for up to 10 days.

*Notes:

OIL – If you want to make it a little more oily, you can add a little bit of oil, to your taste. I like it just the way it is and am happy to have a delicious mayo that has no added oil (and just relies on the good fat in the cashews,) but I can see where someone might want it a little bit more “slippery”.

RAW CASHEWS – The best way to do the cashews is to have them pre-soaked overnight. I always soak (in 1/2 cup amounts) cashews overnight, drain them and then store them in the freezer for when I need them for a recipe. IF you forget to soak your Cashews ahead of time, you can pour hot water over them and let them sit for 30 minutes.

SALT – You can use any sea salt BUT if you want to capture that bit of eggy-flavor, you can use “Black” salt. This is a salt that has a sulphury smell and adds an egg flavor to vegan dishes.

WATER – If you’re making this for immediate use, you may want to add a touch more water, depending on how creamy your blender makes it. Don’t add TOO MUCH more, just a drop at a time, because you don’t want it to be watery. If you’re making this for future use, the amount of water in the recipe will make it creamy. Either way, if you have it in the fridge for later use, you MAY need to add a bit more water as it may thicken.

BLENDER – I did mine in my personal smoothie blender (off-brand) and it came out creamy and delicious. (But I did have to add a touch more water.)
