About 2 cups
- 4 tbsp. extra-virgin olive oil
- 2 cloves garlic, minced
- 4 large tomatoes, diced
- 1/4 c. thinly sliced basil
- 2 tbsp. balsamic vinegar
- 1 tsp. kosher salt
- Pinch of crushed red pepper flakes
- In a large bowl, toss together all of the ingredients.
- Let marinate for at least 30 minutes.
This can be used as a topping for toasted baguette slices or you can use it as a sauce for pasta, veggies, fish, etc.
