Recipe – Greek-style Lentils -(Lenticchie alla Griko)

10 minutes (if lentils and bruschetta are made ahead of time)

N/A (if lentils and bruschetta are made ahead of time)

Yields

5 cups

Ingredients

  • 3 cups cooked lentils
  • 1 3/4 cup prepared bruschetta sauce*
  • 1/4 cup sun-dried tomatoes, chopped (without oil)
  • 1/4 cup chopped, fresh basil
  • 6-8 oz crumbled feta cheese

Directions

  1. Mix first 4 ingredients together
  2. Stir in feta cheese

Notes

This can be served as an appetizer by separating endive leaves and filling them with the mixture. It can also be used as a salad on top of arugula or other dark, leafy greens
