Ingredients
- 3 cups cooked lentils
- 1 3/4 cup prepared bruschetta sauce*
- 1/4 cup sun-dried tomatoes, chopped (without oil)
- 1/4 cup chopped, fresh basil
- 6-8 oz crumbled feta cheese
Directions
- Mix first 4 ingredients together
- Stir in feta cheese
Notes
This can be served as an appetizer by separating endive leaves and filling them with the mixture. It can also be used as a salad on top of arugula or other dark, leafy greens
