Recipe – Southern Belle Blondies

Ingredients

  • 1/4 cup Oats
  • 1 tsp Baking Powder
  • 1/4 teaspoon Salt
  • 1/2 cup Sugar (Coconut, Date, Maple or Honey Sugar)*
  • 1 1/2 cups cooked, White Beans (or 1 15 oz can)
  • 1 Tablespoon Vanilla Extract
  • 1/4 cup Cashew (or Almond) Butter
  • 1/2 cup chopped Pecans or Walnuts
  • 1/2 cup raisins (optional)

Directions

  1. Pre-heat oven to 350 F.
  2. Line an 8″x8″ baking dish with parchment paper, or grease with coconut oil
  3. Put all ingredients, except the nuts and raisins, into the food processor and process until a soft batter forms
  4. Fold in chopped nuts and raisins
  5. Pour batter into prepared pan
  6. Bake 30 minutes (it may not seem done, but let it cool and it will firm up)
  7. Cool completely before slicing and serving

*Notes

The date sugar is the only sugar that will not be considered an “added sugar” because it is the entire date, dehydrated and ground up. Coconut sugar IS considered an “added sugar” but it is very low on the glycemic index and should not increase your blood sugar. Honey and Maple Sugars are higher on the glycemic index, but still not quite as high as cane sugar.
