Recipe – Southern Belle Blondies

Ingredients

  • 1/4 cup Oats
  • 1 tsp Baking Powder
  • 1/4 teaspoon Salt
  • 1/2 cup Maple Sugar or Coconut Sugar*
  • 1 1/2 cups cooked, White Beans (or 1 15 oz can)
  • 1 Tablespoon Vanilla Extract
  • 1/4 cup Cashew (or Almond) Butter
  • 1/2 cup chopped Pecans or Walnuts

Directions

  1. Pre-heat oven to 350 F.
  2. Line an 8″x8″ baking dish with parchment paper, or grease with coconut oil
  3. Put all ingredients, except the nuts, into the food processor and process until a soft batter forms
  4. Fold in chopped nuts
  5. Pour batter into prepared pan
  6. Bake 30 minutes (it may not seem done, but let it cool and it will firm up)
  7. Cool completely before slicing and serving

TO MAKE INTO PUDDING CAKE – NO ADDED SUGAR

*If you want to make this “no added sugar” (because, yes, even natural sugars can be considered added sugar,) replace maple syrup with date paste. You can replace it with up to 1 cup of date paste to get the desired sweetness (go ahead and taste the batter – 100% safe!!) Add 1/2 cup golden raisins to complete the transformation into a moist pudding cake!
